Long time customer Rolly Sweegan and friend Tony fished this afternoon with Capt. Jim Burnsed of the Santiva Saltwater Fishing Team.  Rolly said he enjoys fishing with any of the captains of the Santiva Team, they are all good

So while Capt. Rob McKay and family are vacationing, "poor ole" Capt. Jim is out slaving away in the Gulf reeling in Bonita.  Bonita usually run in large schools, providing good action and a strong fight.

Capt. Jimmy Burnsed was on the water this afternoon too, and promised a picture of his red fish catch.
He and Capt. Josh are headed to the Halloween Party at the Tween Waters Inn tonight, so he forgot all about sending Mom any pictures.

Rob , Amy and girls are RV ing the south.  They are pictured here in Alabama.  The consciences is that they are having a great time and the changing leaves are beautiful.

John Spencer and friends fishing this morning with Capt. Jim Burnsed were able to reel in some nice red fish before the rain began today. No chance for a sun tan off Captiva today.
 Looks like rain again all day tomorrow.

T.J. Obringer,  sons Trip and Jack,  with Grandpa "Pop" ( not pictured) were visiting Captiva Island from Kansas this week.
T.J. said he wanted to do something "different" with his boys.  Well fishing with Capt. Jim Burnsed of the Santiva Saltwater Fishing Team, was "different" The family had a great 3 hours of fishing this morning. Having a lot of action catching lady fish, sea trout and yes ......cat fish.
That's right sometimes we catch Cat fish.  Kids just want to have fun sometimes quantity is more important than quality.
Taking a fishing charter with children can be enjoyable , if you just let them have fun .

Mr. and Mrs. Mike Diaz honeymooned on Captiva this week.
The Diaz's chartered Capt. Jim Burnsed of the Santiva Saltwater Fishing Team to take them up to visit the beautiful island north of Captiva, that can only be accessed by boat. Mike and bride enjoyed a wonderful lunch on historic Cabbage Key.  Not only did the see and visit the pristine beaches of North Captiva and Cayo Costa but they encountered schools of Dolphin and slow moving manatees.

Capt. Jimmy Burnsed of the Santiva Saltwater Fishing Team, amazed even himself with this 18lb grouper.  Fishing on the outside of Captiva Island Capt. Jimmy and his customer Bob Terrell reeled in a lot of grouper sandwiches.




Florida Seafood Recipe

Herb-Crusted Baked Grouper

Ingredients
46-ounce Florida grouper fillets
2tablespoons olive oil
 salt to taste
 black pepper, freshly ground, to taste
1tablespoon dried oregano
1tablespoon dried basil
1tablespoon dried thyme
1tablespoon dried rosemary
4tablespoons butter, melted
1small yellow Florida onion, sliced
Preparation
Preheat oven to 350 degrees F. Coat grouper liberally with olive oil. In a flat dish, crumble the herbs and mix well. Roll each filet in herb mixture, lightly coating each side. Season the filets with salt and fresh ground pepper. Place filets in a baking dish with onions; drizzle the melted butter evenly over the herbed filets. Place in oven and cook for 20 minutes until opaque in the center. Remove and serve fillets topped with onions.

 Santiva Charters provides service from Captiva, North Captiva and Pine Islands.

Jimmy, Randy and Jim fished 4 days with Capt. Rob McKay of the Santiva Saltwater Fishing Team.  Boarding the boat each morning from Pine Island at .....9AM,......  I would guess this was a bankers holiday.

Good conversation, and fun was had by all.  Capt. Rob fished Pine Island sound on the inside catching red fish and snook and outside in the Gulf of Mexico for Grouper.

I'll bet these guy will have a difficult time going back to reality after being in paradise for 4 days.

Rob grew up over on Ft. Myers Beach joining the Santiva Team in 2000,  along with becoming Capt. Jim's son in law the same year.

Matthew and his family are members of Winkler Road Baptist Church along with Capt. Jim and Dall Burnsed .  Scott and Barbara Cooper were kind enough to allow Matthew to join them on their fishing trip with Capt. Jim on Oct 22.

Now Matthew , was working as 1st mate that day,
but it looks to me like he might have miss understood his job description...haha....

Matthew caught the first snook of his life and his second redfish.  Matthew has volunteered to help Capt. Jim every Saturday ....good job Matthew.

Long time friend and customer Scott Cooper his wife Barbara Cooper and friend Dave, braved the 20 knot + winds today to fish with Capt. Jim Burnsed of the Santiva Saltwater fishing Team.  Scott and Barbara vacationed to Captiva from Atlanta back in the 80d's finally making the move to Bonita Springs in the 90d's.  Scott still come over to fish with Capt Jim.

Scott and party boated small snook and redfish this morning, and successfully caught redfish to keep.
I know on Barbara's facebook page, she has dinner already planned for tonight.

Thanks Scott and Barbara for your loyalty over the years. Its customers like ya'll that keeps Santiva going.

We have settled down from our vacation and I was going over pics. One of the highlights of our trip was the photo of our boy with the shark. I fish, and this may......... or may not have been a spectular catch but it ment the world to us. Thank you Jimmy and Laura.

Santiva Saltwater Fishing Team-Burnsed Family


Charlie and Pam Kriegel visitng Sanibel/Captiva from Maine.....fished this afternoon with Capt. Jim Burnsed.  Can you believe that folks from Maine have on jackets in Florida ? In spite of cooler and windy conditions , Pam and Charlie reeled in on some fun

 Capt. Jim fished with the friendly faces of the Paul Edelman party in the morning.
 My Dad , Edgar Collins will be happy to know that this catch ended up in freezer paper with his name on it.  I did cook a little for Capt. Jim's dinner.

I took the red fish fillet sprinkled with a little catus dust, melted some butter in a fry pan. Once the butter was warm I added the fish topping with honey mustard. I browned on one side than flipped the mustard side down and adder a few capers. Sauteed until done ( flaky)
The butter, honey mustard and capers made a nice sauce, and the catus dust gave a great color.
