The Jacobs men when out this afternoon with Capt. Jim Burnsed of the Santiva Saltwater Fishing Team.
Today was a slow day for fishing, high winds and the looming cold front predicted to arrive in our area tomorrow, sent the fish to deeper waters. The Jacobs were able to boat a big red fish along with sheepshead, black drum and flounder.

Mr. John Foskett of Sanibel,  his son Ken and grandson who are visiting Sanibel over the Thanksgiving holiday fished this morning with Capt. Jim of the Santiva Saltwater Fishing Team.
John always books a  fishing trip each year when the family is in town.

 Today was sunny and warm, but the gusty wind made for tough fishing.
John said Capt. Jim never gives up, and they always go home with dinner.

Santiva Saltwater Fishing Team - The Burnsed Family

Bob and Kathy Marquardt are yearly visitors to Captiva Island from Sylvania, Ohio. The family hooked up some big red fish this morning while out with Capt. Jim Burnsed of the Santiva Saltwater Fishing Team.
Bob and Kathy have included a fishing trip with Capt. Jim each year while vacationing in our area.

The Marquardts are one of the 1000's of families that have discovered their is no better place to relax than the beautiful Sanibel - Captiva area.  Sanibel and Captiva have the highest average year round temperatures of the continental USA.
 Our beaches are rated in the top ten in the world and Sanibel is rated in the top 4 beaches for shell collecting.  WOW that is impressive when you think that the 2 islands together are less then 20 miles from tip to tip and 2 miles wide at the widest point and 2/3 of the Islands are National Wildlife Refuge
 Don't forget the SWFL is a fishing capitol too. Come see for yourself what the fuss is all about.

Capt. Rob McKay of the Santiva Saltwater Fishing Team, likes to save up his pictures and send them out in one swoop.  So here are some smiling faces from Sunday November 20 to Wednesday November 23, 2011.
Capt. Rob  works from  the Tween water Marina on Captiva Island, offering daily tours for fishing, shelling and wildlife excursions  .
A native islander from Ft. Myers Beach, Capt Rob grew up boating all of the waters of Southwest Florida. His vast knowledge of our area and love of what he does makes being aboard boat with Capt. Rob fun for all ages.
 The Burnsed family and Santiva Saltwater Fishing Team were fortunate to welcome Rob to the family and team in 2000.

The November sharks are not as big as our summer sharks,  but they are still fun to catch.
This family fishing with Capt. Jim Burnsed of the Santiva Saltwater Fishing team on Monday afternoon enjoyed the excitement of catching sharks.  Everyone reeled in their own shark ...... but Mom preferred not to touch hers.  "what a girl sissy " just kidding.

 Its Thanksgiving week on Captiva Island.  Families from all over the USA will come to our area to soak up the warm sunny weather before setting in for the long cold winter.
The Graves family fishing with Capt. Rob McKay of the Santiva Saltwater Fishing Team were doing that just yesterday. The family was visiting from Nevada...that is a long ways from Captiva.
The 85 degree weather and great fishing trip with Capt. Rob  was worth the travel.
The Graves family is made up of Dennis, Dusty, Jim , Mindy and Dee Dee.
I wonder if they are going to stuff and bake a red fish for Thanksgiving dinner ?

Tim Tobin and children braved the high winds of Saturday November 19, 2011 to fish Pine Island Sound with Capt. Jim Burnsed of the Santiva Saltwater Fishing Team.
When I was going thru the pictures, I could just imagine Dad Tim and big brother Tim Jr talking little Emma into touching the fish.
The family has another trip planned for Tuesday,  lets  hope the weather is better.
I know dad Tim would like to get into some nice Redfish.

Happy 21st Birthday to Capt. Jim and Dall Burnsed's grandson Brian Palmese Jr.
Brian had a really big 21st birthday, he had a new baby sister to share his birth date with.

Hannah Palmese was born on November 15th to Brian Palmese Sr. and his wife( step mom) Kelly.  Grandson's Brian, Tim and Zach have a little half brother Noah ( 4 boys for Brian Sr.) now a sister.
Congratulations to all......


We are excited that Brian has a new position with the Toyota Dealership in the Tampa area.  See Mom's
mudding and truck racing is educational.  If you break enough stuff, you learn had to fix it

Santiva Saltwater Fishing Team - The Burnsed Family

From our home to yours, the Santiva Saltwater Fishing Team and Burnsed Family, hope that 2011 will be a wonderful Thanksgiving for America. With all Americans looking forward to a new and prosperous future . Remembering we are one nation under God.
Many years ago, New England's coastal regions stuffed fish for their Thankgiving dinner rather than turkey, and most often that fish was cod or haddock. This results in a wonderful melange of stuffing, flaky, mild fish with just a touch of smokiness from bacon. To be truly traditional you serve this cod recipe with boiled or roasted potatoes and peas, but you could go anywhere with this. If you use a large cod for this recipe you can serve 4-6, a haddock will probably serve only 2. Check the links below to see some excellent stuffing recipes.

Prep Time: 20 minutes

Cook Time: 45 minutes

Total Time: 65 minutes

Ingredients:

  • 1 whole codfish or haddock
  • 1 batch of your favorite stuffing (See Below)
  • Kosher salt
  • 8-10 strips of bacon
  • Lemons to serve
  • 2-3 wooden skewers

Preparation:

Make sure the cod or haddock is well scaled and washed. You can leave the head on or off -- your choice. Snip off the fins with shears or scissors. Salt it lightly and place it on a greased baking sheet.
Preheat oven to 400 degrees.
Stuff the fish with your favorite stuffing; I like oyster stuffings for this recipe. Put the excess stuffing (there is usually lots left over after stuffing) in a casserole dish to cook alongside the fish.
Close the cavity of the cod with the skewers by threading them in and out of the belly. You could sew it shut, too, but this is a lot of work.
Lay strips of bacon over the fish on the diagonal. If you remove the head, make sure bacon strips cover the cut end well or it will dry out.
Bake in the oven for 10 minutes per inch of thickness of the cod, usually between 40-50 minutes. Once the bacon is crisp, remove it and serve it with the potatoes. At any rate, remove the bacon at least 10 minutes before the end of cooking to crisp up the skin.
To serve, carefully remove the cod from the baking sheet -- you may need to use two large spatulas -- to a serving platter. Remove the skewers and let the stuffing spill out on the platter. Arrange the lemons and the boiled or roasted potatoes around and serve at once.
I like a buttery Chardonnay with this dish, but really any full-bodied white would do well.

Eddie Abate visiting from San Diego, CA along with friends Jack and Tootsie from Texas had a great workout today while fishing with Capt. Jim Burnsed of the Santiva Saltwater Fishing Team.

During their all day trip the anglers boated sharks, mackerel, Bonita, sea trout and lady fish and other specie.
Capt. Jim said the fishing action was non stop all day.
It was beautiful day off Captiva island 85 degree
sunny and clear.
